On the Menu

Nothing makes me laugh more than when Martin Short explains to Steve Martin, in his self-created accent, that they will now discuss the "maaaneuuu", to which Diane Keaton has to clarify that he means the menu. By far, one of the funniest scenes in the movie.

Between finals and vacation, my kitchen has been seriously deprived of some much needed attention and our bellies of some even much more needed home cooking. On the hunt for some healthy and easy to cook meals, I stumbled upon Gina's blog...jackpot! She features amazing recipes that are especially friendly to those on the Weight Watchers diet as she calculates for you exactly how many points each serving is, but my favorite part is the amazing selection! Mango and I cancelled our WW accounts a little while back, but plan on starting it up again. I figured that cooking some of these recipes will help get us back on the healthy train!

For my battle plan, I decided to create a menu for the week and did my grocery shopping yesterday after work. I did a combination of recipes from Cooking Light and Gina's Blog:

Monday - Fish Tacos with Lime-Cilantro CremaI've actually made this recipe before and it quickly became one of our favorites. Other than sushi, we don't really seem to be getting enough fish in our diet, so I figured at least one fish dish a week would be good. This one is fast and super easy to make. To kick up a notch I added in some fresh avocado...yum!

Tuesday- Spicy Shrimp Fried Rice
The minute I saw this, my mouth started to water. I've been craving Chinese for a while, so this is perfect. The recipe promises lots of shrimp in every bite...sweet!
Wednesday-Spinach Stuffed Shells with Meat Sauce What can I say, I'm a sucker for a good pasta dish. I've never made stuffed shells before, so this will be a first. The recipe serves 10-11, so I cut it in half for the Mango and I.
Thursday- Leftovers!I have a feeling there will be more than enough home cooking goodness left over for dinner and since I have class on Thursdays, its perfect because all we have to do is reheat!
Friday- A Night Out on the Town
Friday night we have to pick my sister up from a late night flight into Miami, so my husband and I figured we'd make a night out of it! I love heading down to Miami and checking out some new restaurants and people watching. Great way to kick off the weekend!

I love menu planning, it makes life easy. I'm actually making stuffed shells tonight :) I'm going to look into those tacos they look delish!
